Ostrich burger on a Roosterkoek

In the place of a normal burger bun, we use delicious homemade roosterkoek for our burgers. And topped with a patty made with ostrich meat that is the signature of the area.
INGREDIENTS (makes 4 regular sized or 3 large patties)
500gr ostrich mince
a small onion (chopped finely)
half a bell pepper (chopped finely) *OPTIONAL
1 egg
2 tablespoons of breadcrumbs or 1 slice of bread (without crusts and softened in a little water)
salt and pepper to taste
Fresh parsley or coriander to taste * OPTIONAL
Mix the onion and peppers with the mince, making sure not to overwork the meat.
add the egg and the breadcrumbs and season to taste.
Divide into 4 and form your patties, making sure they are not to thick and keep in mind that they will shrink while cooking.
Keeping the mixture cold will help to shape.
Fry the patties a little olive oil until just done.
Ostrich meat can become very dry if you overcook the meat and can be served slightly pink.
Serve your burger with your favourite garnishes. We like to add a fresh lettuce leaf, a slice of tomato onion and if we are feeling festive, a pineapple ring :)
