Basic Tomato pasta or pizza sauce

Basic pizza Sauce

1 packet of baby plum or Romanita tomatoes (cherry tomatoes can work but they need to be very ripe)

1 can of whole or diced tomatoes in tomato sauce/juice

Herbs (oregano, parsley, sweet basil, thyme)

Olive oil

Coarsely ground salt

Red bell peppers (optional but makes a nice spicy sauce)


Cut the tomatoes in half and the peppers in pieces and place in a baking tray. It helps to line the tray with foil - makes cleaning up a breeze. Add your herbs and salt and drizzle with some olive oil.

Roast the tomatoes in the oven until fully cooked and starting to caramelize (turning black on the edges)

While roasting the tomatoes, pour your canned tomatoes in a sauce pan and cook on high to reduce the sauce slightly. This is optional, but it does thicken the final sauce slightly.

Once your tomatoes are done, add to the canned tomatoes, making sure you scrape the herbs and oil out with the tomatoes. All the flavour is in that oil.

Using a hand blender, puree the whole mixture until smooth.

This sauce can be used for pizza or pasta or whatever else you would like. It keeps well in the fridge for up to 10 days in a sealed container. If you find the sauce is a little sour to your taste (which can happen when using tomatoes that are not ripe enough) just add a little honey or sweetener of choice.
